Step is when you always move to the next white key, just like walking.
Skip is when you leave a white key out and skip over it, just like leapfrog.
The piano is a long “stairway” of white keys. You can either step to the next adjacent white key (up or down from where you are), or you can skip over keys to reach others that are further away.
Play 1 3 5 7. You've just skipped over all the “even” keys, 2 4 6!
Play 1 2 3 4 5 6 7 8. You've just moved by “step,” to an adjacent key.
